Lets clear some things up... insurance is a contract, an insurer won't try to 'get out' of paying a claim but if you break the contract by say not telling them about a modification (anything non manufacturer spec) they can legally not pay. Always read the policy wording front to back. Usually if you dont have a cert/wof/reg you won't predjudice a claim unless the reason it doesnt have said cert/wof/reg contributed to the claim - i.e. no wof for worn shock and thats the reason you crashed. If nothing else have third party cover.

Most policies are market value so you will be paid out realistically what the car is worth on the market.

So then when the insurance company asks me how much it is worth, I really need to say "how much do you value it at" because that's all I'm going to get? And save on the payments

That won't work as they can't 'value' it over the phone, if its a write off a pre accident valuation will be done by a registered valuer which will realistally value the car including mods, condition, kms etc and its pretty much what you could sell the vehicle on the likes of trade me for. Hope that helps a bit.
